My IIIF is a bit too close in age to my M3, so I'd like to try something older! Specifically, a black paint II or III, in good working condition. Cosmetics are not overly important, as long as the shutter speeds are accurate, the RF is clear and aligned, and it has no other functional problems.
My IIIF is a Red Dial model with a self-timer from 1954, and was just serviced by Youxin Ye a few months ago. It's in excellent shape overall, the shutter is accurate and the VF is very clean. Cosmetically it's great, you can see the condition in pictures.
