Ilford does a yearly ultra large format run and you can order fp4+, hp5+ and delta100 pretty much in any format (it’a super expensive though)

Cheaper alternatives are shanghai gp3 (that is really orwo) but it’s temporarily discontinued. An even cheaper alternative is xray film, I used it a lot in the past and it’s perfect for contact printing if handled and processed correctly.

Years and years ago, when I was in high school, I had occasion to use the Photo Staff's ancient 4x5 Speed Graphic now and then. That was fun, but my large-camera real joy was on the very rare occasions when I could borrow my grandfather's ~1953 Linhof Technika 23 ... That was such a beautifully made, precise, and flexible piece of machinery! He had the complete kit with all three lenses and matched rangefinder cam, both sheet and roll film backs, etc. I've often considered hunting for one on the used market...

Do it! The really nice thing about Linhof is that they are still servicing many of their cameras. Patience is required though.
