Because Nikon simply picked a number out of a hat and stuck "240" resolution field.
Digital images are made up of a 2D array of pixels, but pixels are dimensionless until they are displayed in some manner. The density is not relevant until then.
When you go to print, the density value tells the printer how to lay the pixels out on paper. So if you have an image with 2000x3000 pixels and you leave the density at 240 PPI, when you print it you will have an 8.3 x 12.5 inch image area on your output print.
