Also, I am a bird photographer but and willing to give up burst rate for the decisive moment and a file better than what I can get from my Nikon.
I hope you can meet for coffee or breakfast sometime. I have been wanting to move to medium format for over a year and have a ton of questions, generally about digital backs and what the longest lens I can purchase for the H or Phase One platform(s).
